The 2023 maple season came in like a lion. Unseasonably high daytime temperatures mid-February led to the earliest sap run in our family’s 119 year history. Not only was the sap running early, it was plentiful: we made 200 gallons of syrup in February. For reference, that is about twenty times what we normally make in the second month of the year. With a start that productive, we can only hope for a favourable finish to the 2023 maple season.
As reported by CTV Barrie, syrup producers all over Ontario are optimistic that our current weather will extend into April. Syrup producers, like most in Ontario this time of year, would like to see daytime temperatures increase so the sap will run again. But what makes syrup producers unique is their desire for nighttime temperatures to drop below freezing well into April. Without the nighttime cold, the sap doesn’t run.
It is a tradeoff that our customers seem willing to accept. Many local families have been enjoying the delicious taste of maple in our pancake house for generations. The chance to come to the sugar camp and smell the syrup boiling and enjoy fresh syrup over pancakes or french toast is worth a few more cold nights.
It is only a couple weeks until Maple Weekend on April 1-2, 2023. Organized by the Ontario Maple Syrup Producers Association, the two-day event promotes Ontario Maple Syrup with syrup making exhibits at producers across the province. We always like to be boiling on Maple Weekend and hopefully, this year, the weather will comply.

This year we celebrate the 50th anniversary of the North American Maple Syrup Council (NAMSC) and the role Ron Shaw played in making the cross-border council a reality. Established in 1973 following a milestone meeting in Orillia, the Council strives to make sure maple producers across the continent have the tools and support they need to sustainably produce high quality maple products.
Together with the Ontario Maple Syrup Producers Association,(OMSPA) the NAMSC plays a vital role in growing the maple industry. We are very proud of the timely role Ron and his friend Amos Baker played in creating both of these organizations.
Our family has been making Shaws Maple Syrup at our Oro-Medonte sugar bush since 1904. Every year, we build on the experience and knowledge of past generations to produce as much maple syrup as we can for our surrounding community. Visit us at our sugar shack during maple season and see how maple syrup is made, take a walk in our maple sugar bush, or enjoy a horse-drawn wagon ride. Afterwards, relax by the fire in our pancake house and enjoy the fresh and unparalleled taste of maple.
